Cook 200g amaranth in 500ml water for 35 minutes. Stir, remove from heat and leave to stand for 15 minutes with lid on.
Amaranth is one of the oldest cultivated plants and was part of the staple diet of the Aztec and Inca civilizations. Amaranth is gluten free and rich in minerals and protein.
