Cranberry Oat Muffins
Blend together ½ cup cranberries, ¼ cup honey or maple syrup, 2 tbsp vegetable oil, and ¾ cup soya or skimmed milk. Stir in 1 cup of oatbran, 1 cup of wholemeal flour, 1 tsp of baking powder and 1 tsp orange peel. Mix well. Fill muffin cases. Bake at gas mark 6 / 400°F / 200°C for 25-30 minutes until nicely browned.
